Turn held simulator capacity into crew bookings

Build the provider’s month from its regular slot schedule, record capacity well before crews are assigned, and then book the people who need it. The month view distinguishes reference, held, partly filled, booked and unused slots, while the side panel keeps the nearest unbooked expiries and conflicts visible.
